Anyone have any big plans for Valentine’s Day yet? Matt and I typically plan a more laid back Valentine’s. Our tradition has always been heart-shaped pizzas, a bottle of wine, and of course, some dessert for me.
Last year I made these super decadent Chocolate Cherry Baileys Cookies, but this year I thought I’d [kind of] change things up and make these adorable sprinkle cookies.
And you guys. I can’t believe I’m going to say this, but I think I like them better then my Peanut Butter Mini Egg Cookies!
And that’s saying somethin’.
I’m not kidding you guys, these cookies are amazing! It’s like biting into the softest, birthday cake flavored Subway cookie. But with the cutest heart shaped sprinkles and pretty pink and red Smarties.
Just look how pretty!
Even the dough was so good, I seriously debated not even baking them. But
I just had to finish the batch once I saw how cute they were when I pulled them out of the oven.
Plus, I was starting to get sick from all the cookie dough I was eating.
My favorite part about these cookies? They are so versatile! You could pretty much adapt them to suit any holiday. And with St. Patrick’s Day right around the corner, I’m already planning on hunting down some green M&M’s and shamrock sprinkles…

Valentine’s Day Confetti Cookies
- 3 Cups All-Purpose Flour (scooped & leveled)
- 1 Box Betty Crooker French Vanilla Cake Mix
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 3/4 Cups Butter (at room temp)
- 3/4 Cup White Sugar
- 1 Cup Brown Sugar
- 1 tbsp Vanilla
- 2 Eggs
- 2 Cups Candy (Smarties, M&M’s, etc)
- 1 Cup Sprinkles
Whisk together flour, cake mix, baking soda, and salt in a large bowl until combined. Set aside.
In the bowl of a stand mixed, beat together butter, sugars, and vanilla until creamy. Scrap down the sides of the bowl as needed. Beat in eggs and egg whites until well incorporated.
Turn the mixer down to low speed and slowly add the flour mixer until just combined.
Scrape down the sides of the bowl. With the mixer still on low, add in the candy and sprinkles. Mix until just combined and candy is evenly distributed.
Cover bowl with plastic wrap and place in the fridge for 2 hours.
Pre-heat the oven to 350. Line cookie sheets with parchment paper.
Using an ice cream scoop or a spoon, shape the dough into 2-inch balls. Place cookie dough balls on the lined cookie sheet about 3 inches apart from each other. Flatten them all with your hands so they are about 1″ thick.
Bake in pre-heated oven for about 10 minutes. After 10 minutes remove them from the oven and let them rest on the cookie sheet for another 5 – 10 minutes before transferring them to a cooling rack.
